We would pair it with miso marinated salmon with steamed bok choy topped with a ginger sesame sauce. The whole cluster grapes undergo a semi carbonic maceration, much like in classic Beaujolais, and are fermented with natural yeasts. The fermentation begins in cement and is then moved to stainless steel to age on its lees.
